Refer to SAP definitions, its quite illustrative & simple:
Setup time
- The time needed to prepare the work center for operations to perform there.
- The setup time is part of the lead-time.
Process time
- The time needed to process a material in an operation.
- The processing time is dependent on the order quantity, and does not contain a setup or teardown time. It is part of the execution time.
Teardown time
- The time needed to restore a work center to its normal state after the operations have been processed.
- The teardown time is part of the execution time.

bEFOR YOU LOOK FOR DEFINITION OF setUP ETC U NEED TO KNOW STANDARD VALUES.
Standard values are planned values for the execution of an operation and are maintained in the operation. Typical standard values are, for instance, set-up and processing. The execution time, costs and capacities are calculated in operations using formulas from the work centers and standard values from the operations.
SO basically set up ,process ,tear etc are STANDARD VALUE paerameters.
CHECK IN WORK CENTRE <BASIC DATA VIEW>
Set up ,process tear down are basically used to breakdown operational activities in Discrete manufacturing.
set up means : time required to setup a job on your work centre(M/c).E.g setting up of blank rod on your lathe m/c
process : time required to process the job on m/c(e.g turning of blank rod on lathe)
tear down : time required for diengaing u r job form W?C.e.g removing your finished job and placing them in the trays.
The basic idea of these breakup of activities is for Finit scheduling,costing etc.
The best way to relate this with SAP is to CHECK sap ides or library.

Setup time :-- It is the time taken for change over from 1 sku running in a resource to another Sku.It is the time taken to clean the resource and nessary time taken to intialize the resource ready for the next sku to be produced.suppose some packing machine is packing 50gm of 1 product now it will pack for 100 gm sku. Now you need to adjust the machine to make it pack 100gm skus.The time taken in the process is called setup time.Generally it is not relevent to production lot.
Process time :- It is the variable time to manufacture the product.Like packing 100 gm of sku the machine will take 24 hr to pack 10000packs.This time is lot wise generally.
Teardown time :-The downtime of a machine following a given work order which usually involves removing parts such as jigs and fixtures and which must be completely finished before setting up for the next order. This is also a kind of fixed time.
