Not that I am a workflow expert, but why don't you prefer to set to obsolete instead of rejecting?
Even this would be my last resort, after using 'kind reminders', escalations, re-routing, etc.
I would be proceeding with great caution with such requests and only after receiving a written reassurance by the person responsible, that this is in line with the company policy. I would still warn the business of the implications if they insist on adopting such approach.

Good advice from Veselina, and in line with BPM practices. Reject is a user decision, made by a user.
A deadline expiry should make the decision obsolete. This is what the "modeled deadline" wizard will even generate for you. Following that you can perform the same action as if the user had rejected (cancel document, email originator or whatever), or do something else altogether.
