Is it possible to provide with step by step guide on how Process Observer works with IDoc? Otherwise if you can point to any existing documentation that covers how Process Observer handles Non-BOR events [(External) Event API] that would be nice also.

I'm afraid I don't have a guide for IDOC available.

The best information available for working with non-BOR events should be in this blog. Some more rather technical information is available in Process Observer In-Depth Workshop.
