Hi Mullapudi,
There are couple of scenarios where in you can use an empty fields,
1) When you have a display field in destination which has to be mapped, and u dont have any matching in source.
2) When you dont have proper data for the destination field and want to update it later.
3) If you want to set some of the field values in destionation to null; then you can select the scenario as update all mapped fileds.
This are couple of scenaios and above said are two more; these are juse examples; depending upon your requirement you might use it some different way.
