Can BAPI_ACC_DOCUMENT_POST create documents for each line in the Excel sheet that we are using for uploading the AP/AR documents in an Inbound file Interface???

yes it can be used...

get the data from excel sheet into an internal table and map with BAPI fields accordingly.....
