We are in the middle of deciding what makes sense for our end users. IS there any difference with we use the standard interface vs a fiorir interface for SAP S/4HANA?

You don't mention what you mean by the "standard interface". I assume you mean legacy, pre-S/4HANA GUI-based UIs.
With S/4HANA Cloud, the Fiori apps are part of the standard interface.
Yes, you will probably find some differences in functionality between the GUI-based UIs and Fiori apps. There will be improvements in user experience and simplification of the apps.

Hi Jonathan,
You might want to also check the Fiori app library. You can review the available app names, but also search for T-codes as well - for example VA01 will bring up create Sales Orders (as well as the similar new Fiori apps)
With Private cloud, you would have access to many of the legacy applications in the legacy UIs, but will be encouraged to evaluate the new features and functionality coming in Fiori.
The strategy moving forward will be to implement new apps/functionality with a Fiori-first mindset.
