Hi Experts,
Can custom fields created using in-app extensions be controlled by security roles?
e.g. The newly created custom field can be editable for one role and non-edtable for another role.
Also can this be possible for stanadrd fields?
Request clarification before answering.
As of now it is not possible to restrict the Custom Fields as per the Security Roles in S/4HANA Cloud.
For standard fields and values you can use the restriction framework for controlling which values can be seen as per the business roles you have created. Please see https://launchpad.support.sap.com/#/notes/0002598733 for for details.

When creating custom fields a list of available UIs and reports to which the custom field could be extended to is listed in the 'custom fields and logic' app. Simply activate the custom field to the available view that would fulfill your requirement.
