To change the document we use FB02. But we cant change all fields here.
Is there any other transaction where we can edit the document more than in FB02.
(I need to change the customised field called "Product" in my project)

Request clarification before answering.
My answer is quite different from all, yes u can change any field after posting.
Financial Accountng/Fin. A/cing Global Settings/Document/Document Header/Document Change Rules, Document Header.
Here u will find the fields which u can edit by default at FB02 but if u still want to change u can add field here.
Please correct me if i am wrong.

Hi,
In certain case you are allowed to change additional fields in your document. You define these fields by maintaining V_TBAER view (SE11). However, please keep in mind that not any field could be changed after posting.

I would go by the view that other than FB02, other way out for such situation would be reversing the document and thereafter posting another one.

Hi,
We can change an FI document only by Tcode : FB02 and we're authorized to change just 2 fields : a "Header text" and a "Reference".
in the purpose to maintain a trace SAP doesn't allowed any other changes.
So if you want to make changes you must reverse the doc and post an other
