Well, this question is definitely very broad, however, here is the process of performance testing SAP applications using LoadRunner

1) Gather the navigation steps and the business processes that needs to be tested, so for example if you need to test the login and logout loadtime, then the Business process will be

Users Login

then Logout

2) you create the script with Vugen, customize it as applicable,

3) run the scripts according to the test objecive using HP LoadRunner controller and the Load Generators

4) Analyze the results using HP LoadRunner Analysis Tool

Done. its not as easy as it sounds, but thats what it is
