I need to make some verifications in transaction VA02 and I'm using the user exit MV45AFZZ. I'd like to know if it's possible to create a log in this user exit, or another one for this transaction.

i dont think we can create/update application log by using user exits of Sales orders , this is as per my knowledge , but try with any Implict/Explict Enhancement which are avail to do so.
