Hi,
what are the tables and fields are required to create a report to display sales order and dispatch details.

If you are meaning delivery details by dispatch here are the tables.
Sales Order Header - VBAK
Sales Order Details - VBAP
Delivery Header - LIKP
Delivery Deails - LIPS
Also, look at VBFA table which is the document flow of a document, so given a document you can find the preceeding and succeeding document.
