You mean : changing the standard sap idoc type? I don't understand. Please give more details why you need that, because it's forbidden by sap.

You cannot just delete a segment (unless it's your own custom IDoc), but you can create a "reduced IDoc" by copying a standard IDoc. IDoc reduction has already been discussed here many, many times - please use search.
