How to know who is changed the particular filed in table.

Do you have table logging enabled for that table?
The info in this link will tell you how to check if you are unsure:

If logging is switched on & that table is in the list to be logged then you can see this via transaction SCU3
depends if the table stores change data or is logged, pls contact your basis people for futher info.
