I am not sure why only those two browsers are listed, but I think you will be fine with Edge as well (in the background it runs chromium anyways...)

The documentation for SAP Build Process Automation lists Edge together with Crome even as reference platform (based on my personal experience MacUsers do face some limitations with some parts of this solution).

As I'm travelling to Vienna by plane, and land at 8:40 so I expect to be onsite at 10:00. Will it be enough or do I need to be earlier?

I don't know exactly what @Dan_Wroblewski and @Rekha_DR planned, but typically they provide very good tutorials that you can follow at your own speed and catch up (in any case I would try to complete the SAP Build prerequisites BEFORE you come, as it will increase your learning time onsite.). Thus I think it will be no issue.
