Any idea on what is the difference between Unmaintained (U) and N. I have never used these two?
Any ideas on where we use them?

N = No check (sy-subrc is set to 0) - effectively, it skips the authorization check, for that specific transaction code (but not others).
U = Unknown or unmaintained object (sy-subrc is handled the same way as C (check)), except the developer has not made up their mind yet which indicator to give the object. At least, in CUSTOMER type systems it works that way.
If you search, you will find more infos.
Cheers,
