Output Type
Specifies the kind of output to be produced.
Use
The output type is predefined for your area of the R/3 System. If
alternative choices are possible, you can list them by pressing F4.
Examples
The output type can specify, for example, a printed form that you need
for internal use or a form that you want to send to a customer or vendor
(for example, an order confirmation). The output type can also be an
internal electronic mail message that you want to send to staff in
another department.

In Output type you can configure your print programs with your form.
An output type is something that controls the output of a certain business object. For example, when you create a purchase order, output is created based on the output type which defines how the output is created(via form, and print program) where it is printed, and when it is printed.

Check the following documentation
In NACE t-code we have the application for each one. based on the application output type can be defined, based on output type script and print program can be defined.
If suppose data can be read from EDI then we should go for condition records.
