The best way to learn worklfow is from SAP Help .

There is a demo workflow for Leave Application on SAP Help . This example is best for learning workflow from start and you will learn all the details like pre worklfow customization , org structure creation , task creation everything .

Just search for Workflow Tutorial on SAP Help , you will get this example.
