Hi,
this transaction is well documented by SAP, if you locate the cursor in the table maintenance generator for single step and then press F1, you'll get a popup showing exactly what it does. Now if you do the same for 2 step and compare the contents of these texts, then I think that without a doubt and very little effort you can make out the differences all by yourself.

<b>One step</b>, two step in Table Maintenance Generator
Single step: Only overview screen is created i.e. the Table Maintenance Program will have only one screen where you can add, delete or edit records.
<b>Two step</b>: Two screens namely the overview screen and Single screen are created. The user can see the key fields in the first screen and can further go on to edit further details.
