Yes,

the table cdhdr(UDATE) will have the date on which the change docuemnet has been created(Which means the date on which that field's value changed in the DB).

Udate & Utime in CDHDR will give u the latest update.

the respective changes made are saved under cdhdr-UDATE and UTIME

It Depends .

if there is any Changedocument class Associated with the table then you can see the related change details. But if there is no change Document object then you cannot see any data from CDHDR and CDPOS.
