Hello and thank you for the interesting session. 
We are currently working on an on-premise R3 (7.5) System with a HANA Database. Is it possible for us to use the APL Library as well and what would be a good starting point?

This depends on license and HANA version you are running, APL is included with SAP HANA 2 SPS04 and higher. How you can leverage APL would then depend if you have runtime / full-use HANA license.
On APL there are many blogs, this one maybe a good starting point to use APL from Python against a HANA (Cloud) instance.
