How can I get to know the tables' names from which I want to extract data from, suppose I know the BI DataSource(for example, 2LIS_03_BF) or the extract structure(for example, MC03BF0), and if, furthermore, can I get to know the name of the corresponding extraction program???

The best way to handle this would be to get some assistance from the R/3 consultants engaged on your project. In your specific case, 2LIS_03_BF extract material movements data from R/3 and material movements information is stored in MKPF & MSEG tables.
