I have gone thru the setup steps for service desk on SM7.0.
However, how to test if it's working OR not?

Hello Ashley,
You can test the service desk scenario in sattilite system by clicking Help --> Create Support message.
Enter all required information and click on Send button.
If the setup is correct, then you should see a message number else it will throw error.
If the message creation is successful, then you can also view the message in solution manager using Tcode crm_dno_monitor or Solar_eval.

You can also start by testing that everything works within solman.
use transaction NOTIF_CREATE or BSP_NOTIF_CREATE and see if you can create a message.
This might allow you to see initial missing customizing.
