Hello - this is a strange question, but does anyone know of a resource online where I can find a list of all the hierarchies in SAP by module. For example SD has the customer hierarchy, MM has the product hierarchy, and FI has the standard ledger hierarchy.
It would also be helpful to know how these hierarchies are used from a business process perspective. For example, the customer hierarchy can be used for pricing and discounts, etc.

There are various hierarchies created in SAP and its totally depends upon the structure. I am giving the list of hierarchies per module here. You can check SAP documentation on SAP help portal for each one them.
FI -
1. Cost Center hierarchy
2. Profit Center hierarchy
3. Cost element hierarchy
4. Financial statement versions
5. Consolidation - Item hierarchy
6. Consolidation - Unit / Group hierarchy
Business Partner
1. BP hierarchy
You have already mention Product hierarchy / Customer and ledger hierarchy.
These are the main hierarchies in SAP. Check the SAP help portal for detail documentation.
