You can find the extract structures for the datasources in the table ROOSOURCE.

You can find the extract structure in RSA6. Basically the extract structure defines the format of the datasource. You can also use RSO2. When you double-click on the extract structure name, you will see all the fields defined (as in SE11).

You open any datasource, you will find the name of the extract structure mentioned there. Double click that extract structure name, it will display the extract structure.
