Hello,
When I create a stock transfer order (ME21n - UB) I want to maintian in tab 'Partners', Function 'LF', but I only have the option to chose between 2 predefined partner functions. How can I add extra functions?

the logic for partner function in UB orders is explained here and in the referenced SAP notes within that KBA.

Do you mean the partner functions in the associated outbound delivery, rather than the STO itself ??
