I am trying to get an email notification to be sent when a Goods Receipt has been posted.
How do I set this process up as i'm struggling.

To whom are you planning to send the email notification.
There are few Situation handling topics related to Good Receipt like 'Confirmation is Overdue for PR Item' which can be sent to the requester.

The Business requirement is still not clear, why will a Purchase Requisitioner expect a mail for a Goods receipt while he is posting the goods receipt himself.
Anyways the approach you are using is not correct. You are using the E-mail template 'MM_IM_GR_MESSAGE_EMAIL'. This Email template is used to send a notification of Goods Receipt to the relevant Purchasing Group.
I have never came across this requirement, We had a requirement where the Requester should receive an E-mail when the delivery date of the Purchase order has crossed, so that the requester can create a confirmation if he has forgotten.
To achieve this we used situation handling.
