I am trying to get an email notification to be sent when a Goods Receipt has been posted.
How do I set this process up as i'm struggling.

You can use the SAP S/4 HANA predefined forms of output management, in order to send Material Documents. You can copy and adapt forms for your needs. Please check the documentation here:

In addition to this, the SAP Fiori App allows you to send a link to the material document details by e-mail.
