In slide 7 you can read :
Posting Date : Dates that determines in which 'Posting Period' a document or a Journal Entry is added to the database.
Document Date : Date that indicate when the shippement of goods take place.
I would suggest that you have a look at the EES, as, on top of the definition it also explains the influence of the dates in the maketing Document into other functions.

I use the 2007 version and the Date Fields are all confused:
for instance Document Date= OCRT,TaxDate and this is the important date for accounting purposes but, OCRT,DocDate is called the Posting Date and OCRT,TaxDate is not shown or made available in most important screens such as Bank Incoming Payments or Bank Outgoing Payments. So I agree with the explanation of the purpose of these two fields, in practice they cannot be used as intended because the real Document Date (OCRT,TaxDate) is not shown or available to be displayed anywhere that matters ( Bank Accounts, B/P etc)
This may be a confusing answer to a new user but I have been experiencing this for the last 8 months.

Posting date is in which date your are entering data into SAP B1.
And document date is the date of document which you have received.
for example you have purchased an item from any other city.
When your vendor dispatch the material from his place, he mention that day date on his inovice, that is document date and when you received the material after two days, you entre GRPO in current date, that is your posting date.
