I am looking at upgrading SAP Commerce 2105 to 2211. I am selecting "Update Running System" and "Localize Types" but I am not so sure about "Create Essential Data". Isn't there a possibility that it may run some impex files or groovy scripts that may break something. What if data was changed by the customer or a script then Essential Data is executed reverting those changes. How do I know. On the other side, should Essential Data required for some features to work properly? For instance I am thinking about Smart Edit. I have found that it now uses UI Theme and had to dig in to find out which impex files to run manually in order to fix Smart Edit. There is nothing in the upgrade notes about that. What is the proper way to update SAP Commerce?

For me, no - I won't select create essential data. Because as you said, it possibly breaks or reverts something.
Usually what I would do is import essential data from the backoffice and sometimes smartedit manually through HAC. This way if something breaks, I know which impex causes it.
Also, I agree that the documentation on upgrades should include which impex should be imported to make everything work.
Steps that I did for upgrade usually just try and fix if there's any errors, no sort of special instructions or so.
