What KPI's can be shown for the following dashboards?
1) Production
2) Sales
3) Work Breakdown Structure

For Production,
1) You can use PO and PR related stuff and give drill down to plant level and monthly also.
2) You can identify some percentage value according to requirement.
3) You can also find out some Lead time
For Sales,
1) Sales order related KPIs
2) Sales Item creation to Invoice, PGI, Delivery, etc
3) Lead time for them
4) Analysis like drill down till sales offices level and sales organization level.

Most appropriate way to find KPIs is interact with client, understand their business and find how to measure performance.

This should REALLY be a question to your business - what they measure as KPI to run their business.
A very generic answer will
Sale - Revenue, Spend, AR, AP etc may be by Region, Product. May extend to sales by sales manager/sales rep

Production - Again quantity of production, expense to production, time to production etc.
