The question is: how to proceed to setup ESH after a system refresh in an S/4HANA system.
Request clarification before answering.
If the system uses HANA DB, you can execute the following task lists to adjust the ESH connectors:
After a System Copy -> task list SAP_ESH_ADJUST_AFTER_COPY in client 000 of the target system.
After a Client Copy (within a system) -> task list SAP_ESH_ADJUST_AFTER_CLIENT_COPY in the target client.
This is the preferred method, and it is faster than recreating the connectors from scratch.
However, if those tasks fail in any way, you need to reset ESH and recreate the connectors. That is done this way:
The above is explained in KBA:
2479611 - Current system is a copy of another system

Also, if the performance of the task lists is poor, refer to these notes:
3359670 - ESH task list SAP_ESH_INITIAL_SETUP_WRK_CLIENT taking a long time
3242198 - ESH Authorization Indexing for Objects ACCOUNTING_DOC_H and ACCT_DOC_LINEITEM_H takes extremely long
