How to build a custom delta extractor per function module?

Dear experts,

I have a requirement to create a custom (Z) extractor per function module, with delta functionality. The logic for the development is already specified but I need to tell ABAP how to develop the delta. Please, can you share a document with the step by step?.

The source system is SAP S4Hana. The destination is SAP BW4Hana
