Adobe forms document shows & character as <(>&<)>
How can I fix this issue?

<(>&<)> is the internal representation of & in a so-called "long text" (ITF format), like a Standard Text or the free texts in various business objects (a text stored in ITF format in tables STXH/STXL, that you may read with function module READ_TEXT).

I guess your Adobe form is custom, so you must change the type of the long text in the Adobe form to either "include text" or "dynamic text" (internal table of type TSFTEXT).

If it's standard, search the SAP notes or contact the SAP support.

If you are maintaining the text as Header Text, click on the 'Detail' icon at the bottom to launch the Text Editor. Re-write the sentence with &. This will appear as '&' in Adobe PDF.

manualy remove the <(> <)> maybe you use a cut/past to put the text
