A customer returns goods to another plant than from where it was bought.
During Customer Returns (CBAR) creation we are changing the line-item plant from X to Y. They expect to see the profitability segment data (plant and profit centre) to be updated/redetermined but this is not happening.
Request clarification before answering.
The system is deliberately set up this way within the copying control customising. It is standard system behavior.
In configuration step: 'Set Copying Control: Billing Document to Sales Document' (102906), the flag 'Dependent Profitability Segment' is set. This means, the Profitability Segment from sales would be inherited to sales – including the attribute : old plant information.
Even in returns order, you use a different plant, but Profitability Segment attributes remain the same - This is to insure consistent margin analysis reporting.
If you create returns order without reference, you will see different behavior.

"Profitability Segment Is Dependent on Preceding Document
Controls whether the profitability segment is determined when a sales document is created or whether the profitability segment is taken over from the preceding document.
Use
The profitability segment should be copied over from the preceding document to the sales document. This ensures a correct revenue recognition in subsequent processes.
Example
You create a sales order. Its subsequent documents are an outbound delivery and a billing document. Later on, you need to create a credit memo request.
In Customizing, you have specified that you want the profitability segment to be dependent on the preceding document.
Since you have created the credit memo request with reference to the sales order, the profitability segment is not determined again, but copied over from the sales order."
