Is there a function module / method I can use to retrieve the total volume of an outbound delivery order in EWM?

You can use Interface /SCWM/IF_API_WHR_OUTBOUND, method READ_OUTBOUND_DLV_ORDER. The interface and all its methods are documented, you will find an example report that you can copy to try it out.
