I'm only familiar with WM, which only has support for 2-step picking and no multi-step putaway.
Can somebody explain if EWM supports multi-step putaway, picking, and more than 2 steps?
So for example, a pick request would suggest a movement from storage type A to B. That movement gets confirmed and then another request generated from B to C. That movement gets confirmed and final request is generated from C to D. Or perhaps final request is from C and then issued out of inventory. The same SU should move through all the stages.
Also, if all this is supported, are these multi-stage 'routes' considered config, or something an end-user can administer?

Yes EWM supports this. Check out layout oriented storage control or process-oriented storage control to meet your requirement.
