I think this is something you should be adressing to your implementation consultant or the Ariba support team.
As far as I'm familiar with Ariba solutions, it is not possible to change specific field names. Also, if I'm not mistaken, the purchasing process for services is different to the purchasing process for materials. For service item lines there should be a corresponding and separate service start and end date fields.
