Hello Khaled,
welcome to the world of SAP!
You can request an S-User here: https://service.sap.com/request-user.
You can find some free basic introduction learning materials here: http://scn.sap.com/docs/DOC-51591.
If your company can be involved with some "advanced" learning materials, you can also check the other SAP Learning Hub courses here: https://training.sap.com/shop/learninghub.
Also, the official SAP training and certification portal: https://training.sap.com.
Best regards,
Laszlo

Hello Khaled,
for being a consultant or project manager, a lot of hands-on experience is more than welcome.
For this reason, it would make sense to first use an SAP software, and then go for the manager / consultant role.
And this is where your current employer might help - ask them which system of which installation they can provide you for practice.
Otherwise, I don't know other methods how S-users can be acquired.
Best regards,
Laszlo
