Documents , there are many and you can find truckloads of the same if you browse through the relevant forums , however an EP consultant usually comes with a J2EE background.
If you could give us a brief of what you are and why you want to get in EP or is it netweaver you are looking at , then maybe we can point you to the relevant material.
Otherwise it would be easy to point you to help.sap.com and ask you to look into EP but then it all depends on your background and what exactly you want to do. Ep / Netweaver.. it is based more on the technology platform.
As Arun says there are many EP development documents on this website. However, please do not ask for the course material as it is copyrighted. Therefore, if you want a copy, you need to pay to go on the courses like everyone else.
The good news is, that a lot of the course material is made up of the documents on sdn and help.sap.com.
