My idea is to convert practice mode in scorm and use it in LMS as a final exam. Would that be possible? Or I need to use only Test mode for that?

Sure. Whatever mode is available in the published SCORM package, that's what they'll need to 'complete' (and complete every mode that is available - watch out for that!). You could even use Demo mode, or the document, if you really wanted to.

How does one produce a SCORM file with ONLY the Practice Mode? I have a bunch of Desktop Assistants with all the modes, (Demo, Practice, Concurrent, and Test). I am attempting to export to SCORM format for incorporation into our LMS. How do I get a SCORM file with only the practice mode?

You need to Hide all of the other modes before you generate the SCORM file. It's a bit annoying if you want them enabled in the Trainer, as after generating the SCORM file you need to un-hide them, but that's the way it works. (It would be nice to have the ability to select at generation time - like you can with Desktop Assistant, but currently not possible.)
