I've tried every setting when creating the item to show multiple attempts but cannot get a result. The information is over written every time I get a new score for the course.
Example:
Fail assessment on first attempt 20%
Pass assessment on second attempt 100%
Score summary report only shows the result of the 2nd attempt.
Has someone else experienced the same thing and can assist in any way please?
I need to see how many times the learner has completed the assessment.

Thank you very much for confirming these 2 options. I was aware of them but was hoping there was another way to report on multiple completions in SF.

To see how many times the learner has attempted to pass the assessment in the SCORM content package, this standard Score Summary report that you already use has a column "No. of Attempts" as per the SAP KBA 2717343 : https://launchpad.support.sap.com/#/notes/2717343
Based on the question, I assume you do not use the assessment/exam functionality within SuccessFactors Learning, and as you already found out, the Score Summary report only shows the final score.
So, if you need to the details by question and you can use SCORM 2004 2nd or 4th ed., we run the SCORM Exam Detail report that provides the incorrect and correct responses. This standard report does not provide data for SCORM 1.2 as per the SAP KBA 2256111: https://launchpad.support.sap.com/#/notes/2256111
