We see in this Release, SAP introduced tenant preferred time zone.
In the past, this defaulted to the time zone of customer's data center. Is that no longer the case? If we do nothing and do not set a preferred time zone what does it default to? We need to fully understand what is the impact of changing this time zone since once changed it can't be reverted?
Request clarification before answering.
We had the same issue and SAP stated this is expected behaviour. Here is their response:
"It is just the drop down showing the first option by default, it does not indicate that the tenant Preferred time zone for the tenant has changed to America/Chicago. The data center of your instances is DC60, which follows UTC as default time zone. That is what the customer tenant is following as well."
