We are currently using Docucentre during our onboarding processes where the system save all the candidates documents in.

What is the underlying database for this tool

In Provisioning the instance database can be found in field DB Pool ID but its not necessary it may be the same for Onboarding/Document Center.
I will suggest to create a ticket for SAP SF Support and provide them the following Infomration:
Document Center Application Server Information -

• Release:
• Revision:
  
• Server:

You can find this information by clicking at 'Show onboarding version information' on Document Center Page of Onboarding application.
