Well in essence they are all just a bunch of fields on the position.
The position title has the biggest role, as that is also the name you'll see on the position org chart (hence its advisable to use it from that perspective). If you don't like a position to show a certain name, this should be adjusted.
Job Code offers a picklist (used to be a foundation object even), to classify what kind of job that is and as its often then child of a job function for instance. You can use it to help standardise the position title, but you could also choose to give the position a different name as the job code is too generic.
Some customers choose to remove job title as it doesn't always have a purpose for them, but often it is generally speaking the same as the position title and only changes if for instance a different title is contractually agreed than what the position suggests. I'm personally not a big fan of this field, I prefer using local job title in Job Info for that on an employee level.

but when downloading the user directory or trying to assign training courses through learning administration, the main field showing is job code
although i totally understand that the job code is drop menu related to the foundation object which has been uploaded in the early stages of the project
so i'm trying to understand the impact of unifying all fields as i've some employees have the correct position title but wrong job code which impacting the correct training assignments
That completely changes the topic, because learning is a very different database and doesn't leverage title as standard field for automatic assignment. I commonly put the title on a custom field (potentially via integration center), so that it can be leveraged in the connector and then in the assignment profile. In general I prefer the usage of integration center here, because user data file fields are not always up-to-date. As job code titles sometimes change, they may no longer be aligned in the user data file, which is one of the reasons I prefer using integration center to directly take it from the object.
