Request clarification before answering.
Why would you want to do that? (It also strikes me as slightly fraudulent and your Audit people probably wouldn't like it!) If you just want a way to record (for example) 'who is responsible for' a document I'd suggest defining Custom Properties to do that.

this information is coming from the Windows Account with which you are logged in.
Basically no changes should be made here in order to be able to track who made which change and when. And especially who has create which content.
But if you want to make a change, you can modify the belonging entity.xml file.
1. In the Producer make a right click on your project and select Open Folder
2. Open the entity.xml with a text editor
3. Make your changes and save the file
4. In the Producer make a right click on the project and click on "Refresh Object"
This should fix your issue, but again you do this on your own risk.
After the correction, it might sense to set-up a second Windows Account with you wished name to avoid to make every time again changes.

these fields are filled in automatically and can only be adjusted if someone else changes the object (or you "hack" the entity file).
If you need to change the "author" field in the documentation, there is a way to do that. You can use the document properties macro. You can add custom properties to the documentation template and then fill in the properties in your project. This will be transferred to the word document and appear there.
