On setting up 2 Workareas in Enable Now:
How do I and where do i re-organise the content from SAP? Do i not worry about reorganising it or is it important to do to aid future activities?

Depends what you want to use the standard content for. If you just want it available for in-app help via SAP Companion then there is no need to organize it, as it is presented in context. If you want to provide access via a 'Trainer' then sure, organize it the way you want - but I would recommend taking copies As Reference into your own user-facing structure so you're not making any changes to the SAP-provided structure (because as soon as you change an object you will no longer receive updates for it (so if SAP provide a new sim in a course structure you changed, you won't see that new sim). For building SCORM packages, same thing but watch out for references.
