When creating business rules I am not sure about the difference between the possible selections jobinformation.jobclassification and jobinformation.employment details.jobinformation.job classification .... Could someone explain that ?

In principle they should give you the same data, it's just a different route you take to get the data (and a bit obsolete) as SuccessFactors keeps showing all tables connected (even 1 pointing back to the original entities).
The rule of thumb is take the fastest way to get the field (i.e. in this case jobinformation.jobclassification).
