Are you able to customise the workflow notifications in Enable Now

We have undertaken a proof-of-concept task, using the Workflow functionality within Enable Now Manager/Producer. We're looking to use the Workflow we've built to automate the process of new Enable Now content review.

We have found the associated email notifications to be poorly formatted and not particularly user friendly. Are we able to reformat these email notification templates? If so do I need a particular role and where do I need to navigate to?

I haven't found anywhere to do that yet, but at least the text must be definable somewhere - if not in the Resources then in the System Workarea. But you're right - the whole workflow email notification / review interface is pretty poor. I've put in a customer improvement request for a stand-alone Fiori-like interface for reviewers. Check it out here (idea 243983 under SAP Enable Now) - where I've also posted a mock-up screen, and if you like the look of it vote it up and maybe SAP will do it.
