Personalize the subscription application

Hi,

I want to create three custom values and can it be assigned to a custom reference field as drop down values. I dont want the user to change or input wrong text for the custom reference, instead choose from the dropdown?

Also in the subscription, I could see customer name is displayed - can I have customer number to be displayed instead name or text

Finally is there way we can personalize the subscription application ?
