We are looking at a situation where we would like to suspend interest for a window of time, then, once that period is over, turn interest calculation back on such that it does not go back and calculate for the period it was shut off.
We use RFINITAR for our interest program.

We played with the Percentage rate set to 0% in our sandbox, didn't seem to work, something about setting it to 0 seemed to just default to no interest, so that next run testing back to normal ops, the interest back posted.
I haven't looked into the Dunning yet. Will see what that might do.

2nd idea
In configuration, search for
There you can try to set a super high limit so interest won't be calculated
Please *note* I personally haven't tested these two items. We have looked at what you are asking.
Finally, 3rd idea - suspend Dunning jobs, and no interest will be calculated at all. Good luck
